Flowstone Queen of the Earth Cabernet Sauvignon draws from a single vineyard in Wilyabrup, planted in the late 1970s. Though they look dishevelled, the old vines produce superb grapes.
The fruit is hand harvested and open fermented with thrice daily plunging. There is no temperature control during fermentation.
The wine remains on skins for several weeks and sees malolactic fermentation. After pressing, the free run and pressings fractions are mixed and settled for two weeks. It is then sent to thin staved French oak barrels.
Maturation occurs over three years before the wine is blended, fined and bottled. Once in the bottle, it is aged there for a further 15 months prior to release.
Dense red purple, Flowstone Queen of the Earth Cabernet Sauvignon has classic Margaret River structure with red and blue fruits, spicy oak and finely honed tannins.
It is Flowstone's top Cabernet. Cellaring potential is 15 years.
